Oatmeal Berry (or anything) Pancakes

Soak 2 cups of 'whole' oats in 2 cups of milk (any type). I may add handful of raisins, sprinkle of flax seeds, to the overnight soak. (OR 1 hour before - Soak 2 cups in 'quick' oats)

Morning of:

Add 2 eggs; 1 tsp b soda; 1/2 tsp b powder; 1 Tbsp oil of choice (coconut is mine lately); couple Tbsps of honey or syrup or sweetener of your choice; Few shakes of salt.

Add any of the following: dried berries, fresh berries, diced banana, etc. I also toss in hemp hearts if I have them, or flax seeds.

Mix together

Sprinkle in and mix up to 1/2 cup of flour of your choice just to a good consistency for pancake mix.

Cook as usual. I use coconut oil for these. I take a paper towel and swab the pan between batches.

We serve our Mixed Berry (our favourite is blackberry, blueberry, strawberry) version with a multi-berry jam (low sugar) as an alternate to maple syrup.

Great to pack as a hearty and nutritious snack later in the day.
